Kitchen cabinet has been meeting for about 15 years.  This is an advisory committee to the Dining Service and Steve Kjellgren, director of Dining Service.  How can Dining Service meet the educational needs of the students.  We think big things on how we can meet the mission of Gustavus to be more environmentally stable and culturally aware and fiscally responsible.   Composting on campus started in this committee.  We are up to 10 tons every three weeks. This is a volunteer committee of faculty, employees and students.

  • Student groups?
  • Marketing?
    • Inside Gustavus
    • Social media
  • PA’s?
  • Student senate
  • Diversity leadership council

What are some big issues?

  • How much energy does it take to create our recipes?
  • Environmental issues, including waste and energy reduction and cultural inclusion
  • Food and health, taste components and experience of eating food culturally, health wise and athletic performance
  • We have had 2 years of disruption in how we do things and have an opportunity to reengage people and food is a great way to bring people together
  • We are lacking an allergen free station and suggestion to explore adding that to the Market Place, possibly in the Rotisserie
  • We are still in a hiring crisis and this limits what Dining Service can offer plus supply chain issues.
    • Educate more on where thing come from in relation to supply chain issues?
  • It’s important that people know what they are putting in their mouth
  • Have educational pieces or ways to engage students with info/QR code at the stations or tables
    • Digital signage could be an option
  • Dining service workers are front line with students – how do we teach our students to respect this when planning programming that affects Dining Service
